"Let's fritter away and be corny"- Corn fritter with Avocado, Feta & tomato salad.


In the sometimes gruelling heat of summer, it is at times really difficult to figure out what to consume for a light lunch or early dinner.
A meal such as a fritter with colourful adornments dancing on top of it seems to be a great choice!

Ingredients:

Serves 4

Kernels cut off 5 mielies ( corn on the cob)
1 red onion diced
1/2 cup of flour
1 tsp baking powder
1 tsp cumin
a bunch of chives chopped
2 eggs

1 avocado sliced
juice of 1/2 lemon
1 tomato deseeded and sliced
a handful of watercress
a few squares of good quality danish feta
balsamic reduction for drizzling

  1.  Place the corn,onion,flour, baking powder,eggs,cumin and chives in a food processor.
  2. Heat a small frying pan to medium heat, fry dollops of the mixture for a few minutes a side.
  3. Combine salad ingredients and place on top of corn fritter.
  4. Drizzle with a balsamic reduction and enjoy!
