A fruity delight- Orange curd and strawberries

This recipe was inspired by a recent episode of Barefoot Contessa I watched one morning. I think it's such a fabulous dish to add to a dinner or cocktail party and most definitely an afternoon tea.

Ingredients:

4 egg yolks
125ml of freshly squeezed orange juice
100 grams butter (unsalted preferably)
125ml caster sugar
zest of 2 oranges
1 punnet of strawberries

Method:

  1. Place orange juice, zest and butter in a saucepan and melt.
  2. Whisk together the egg yolks and sugar.
  3. Slowly add the butter mixture into egg mixture.
  4. Place the mix back into the saucepan and simmer for a few minutes until thick and gloopy
  5. Let it set in the fridge
  6. Serve on a pleasant looking plate adorned with strawberries.
